Raw chocolates and birthdays

It’s my daughter’s birthday weekend so I made some raw chocolates for her and her friends.

I used a 1:1 ratio with cacao to coconut oil.


1 cup coconut oil

1 cup raw cacao powder

1 teaspoon vanilla essence

6 drops of WildOrange essential oil *

Rice Bran syrup (Biona or other organic make)


Set up a glass bowl over a bowl of boiling water (the water should not be able to enter the top bowl – bain marie style).

Add the coconut oil and cacao together in the bowl over the hot water.  The idea is the heat from underneath will melt the coconut oil with ease allowing you to blend in the other ingredients.  Once the oil and cacao are mixed together you can then stir in the vanilla essence and essential oil for flavouring.

You can either add in a tablespoon of rice bran syrup to sweeten or if like me you want to make small chocolates then I spooned about a heaped teaspoon of the chocolate mixture into a silicon chocolate mould and then added a squeeze of rice bran syrup to the centre of each.

I placed my chocolate mould into the freezer for about an hour until it had set.

Once removed they are bitter but in that dark chocolate elegance way because they contain no dairy but the flavours of the orange and vanilla work beautifully.
