Mushroom Soup

I made a delicious mushroom soup today and it was very easy indeed.  I used a roasting tin, placed 8 medium sized mushrooms on it, slight drizzle of olive oil and a dash of balsamic vinegar, pinch of herbs and crumbled a little blue cheese over them.  I roasted them for half an hour and then blended the mixture and served as a soup, with a sprig of parsley on top.

Next week I have Exam No 2 from my IIN course which I am slightly nervous about as there is so much to learn.   Today was a good day.  My daughter was off from school due to the teachers’ strike so we had a lovely morning getting our greengroceries (we got kale, swiss chard and a mixed leaf salad from Tuppenny Barn) in Emsworth.
